    Tortillas with Cheese (Quesadillas)

    Ingredients: 6 or 8-inch corn or flour tortillas, Shredded cheddar cheese, Salsa (optional), Refried beans (optional).

    Instructions: Place one tortilla on a paper plate. Spread about two tablespoons of cheese slightly off center of the tortilla. Fold tortilla in half. Cook in microwave 15 seconds on high power or until cheese melts. If desired, cut in half with pizza cutter. Repeat for multiple tortillas, then cool slightly and serve with salsa and refried beans on the side, if desired. Option: Refried beans may be spread on the tortilla and topped with cheese.
