Apple Upside Down Cake

INGREDIENTS

Cream cheese room at temperature

Butter at room temperature

11 ounces

 

Sugar Granulated

Eggs whole

1 pint

 

Yolks with sugar added

5.3 ounces

 

Vanilla extract

1 teaspoon

 

Cake flour (Hi ratio)

18 ounces

 

Baking powder

½ ounce

 

Almond flour

6 ounces

 

Cinnamon

¼ ounce

 

 

 

 

PREPARATION :

•  Peel core and cut apples into 8 pieces wedge style.

•  Caramelize sugar in saucepan. Stir in butter carefully with a whisk, a little at a time until combined.

•  Divide butter sugar mixture between three 10 inch cake pans.

•  Press the apples into the warm caramel(stick in firmly)

•  Brush apples with lemon juice; sprinkle with cinnamon sugar mixture over top.(let cool)


Strawberry Shortcake

Lemon juice

1 ounce

 

Milk

13 ounces

Ingredients for Topping are below

 

 

Strawberries fresh ripe

2 pints

 

Puree of strawberries or raspberries

1 cup

 

Heavy cream

1 quart

 

Confectioners sugar

2 ounces

 

Vanilla extract

1 teaspoon

 

Confectioners sugar

dusting

 

 

 

 

PREPARATION:

•  Sift all the dry ingredients into a bowl

•  Cut in the cubed butter until the mixture resembles peas

•  Whisk the lemon juice and milk together.(let rest a few minutes until buttermilk forms)

•  Add the milk mixture to the dry mixture, and mix just to combine.

•  Knead on floured table for 15 minutes.

•  Roll out ½ inch thick and cut with a 3.25 inch round cutter.

•  Place on parchment paper egg wash and bake at 300 degrees in a convection oven until the tops are golden and sound hollow when cooked, place on wire racks to cool.


Tuille Cookies

INGREDIENTS

Icing Sugar

Unsalted Butter

A P Flour

as required

 

 

 

 

PREPARATION : Bake at 350 degrees

(1) Mix Sugar with the room temperature butter in electric mixer with the whisk until the mixture is light and fluffy.(creamy )add the egg whites mixing well.

(2) Fold in the sieved flour and mix well then remove from bowl and wrap and chill for 2 hours.

(2) Using spoon or spatula spread into 8 circles on greased sheet tray cook until golden light brown

(3) Remove from oven and form over muffin cup pressing down until the shape forms.

Note ; The batter sets once removed from the oven, store in an air tight container.


Vanilla Cheesecake

Cream Cheese

Heavy Cream

1 cup

Cake Crumbs

as required

 

Butter for cake crumbs

2 ounces

 

 

 

 

PREPARATION :

First Make cake crumb mix and place in buttered dish

(1)Melt butter and mix with graham cracker crumbs.

(2) Lightly oil a spring-form pan (Cheesecake pan) and fill with the crust, pressing down to form the base bake at a pre heated 350 degree oven for 5 minutes, then remove and cool.

(3) Whip the cream cheese and sugar together until well blended scraping down the sides until well mixed.

(4) Add the eggs while blending then the heavy cream and vanilla extract mix well.

(5) Scale the cheese cake mixture into the lined pans and bake on a sheet tray half full with warm water until the cake rises and the sides are golden in colour. (Test with a wooden skewer and it comes out clean.)

Note: Variations Oreo cheese cake, or baileys cheese cake adjust the base recipe.


Warm Bacon Dressing

Garlic crushed

Brown Sugar

Cider Vinegar

2\3 cup

 

Vegetable Oil

1.5 cups

 

Salt and Black Pepper cracked

To taste

 

 

 

 

PREPARATION :

•  Heat pan add bacon render all fat and remove bacon reserve.

•  Add shallot and garlic to bacon fat cook a little add brown sugar and melt then whisk in cider vinegar and then the oil simmer.

•  Place the reserved crunchy bacon pieces on top of salad.
