This course is dedicated to providing students with a working knowledge of classical culinary techniques. Through lecture, hands-on work, and projects the student will learn the skills needed for a career in the food service industry. Training in sanitation, hot food production, meat identification and fabrication, pantry, breakfast cookery, purchasing, and basic culinary skills is offered. Curriculum also includes culinary mathematics, field trips, and competitive events. Students successfully completing this course may be eligible to earn a Career and Technical Education diploma seal.  Students successfully completing this course will satisfy the sequential elective requirement for the standard or modified standard diploma.  This course requires a student materials fee as listed in FCPS Notice 5922.

Prerequisite:  Culinary Arts 1

Locations: Chantilly, Edison, and Marshall Academies

This course builds on the skills learned in Culinary Arts 1. Further advanced instruction in table service, baking, pastries, and management techniques are emphasized. Students create a plan for establishing a restaurant that includes menu selection and preparation, facilities design, and management components. During the second semester, selected students may participate in internship activities as an option in cooperation with the local business community. Students completing Culinary Arts 1 and Culinary Arts 2 with a grade of "B" or better may be eligible to articulate credit at Stratford University, Johnson and Wales University, Art Institute of Washington, or Northern Virginia Community College. Industry certification may be available as part of this course.  Students successfully completing this course may be eligible to earn a Career and Technical Education diploma seal.  Students successfully completing this course will satisfy the sequential elective requirement for the standard or modified standard diploma.  Successful completion of this course in conjunction with a corresponding industry certification may qualify for a student selected verified credit.  This course requires a student materials fee as listed in FCPS Notice 5922.

EARLY CHILDHOOD CAREERS 1

This course is designed to combine the study of child growth and development with participation in the planning and operation of a preschool laboratory for three- and four-year-olds. Opportunity is provided for students to prepare for careers involving children and for the responsibility of making daily decisions that affect children. Career opportunities that involve working with children are explored, such as social work, education, psychology, child-care, and medicine. Students enrolling in this course may be required to complete an application and/or have approval of the instructor. Students completing Early Childhood Careers 1 and Early Childhood Careers 2 or Child Development and Parenting with a "B" or better in each course may be eligible to articulate up to seven credits at the Northern Virginia Community College. Students successfully completing this course may be eligible to earn a Career and Technical Education diploma seal.  Students successfully completing this course will satisfy the sequential elective requirement for the standard or modified standard diploma.

This course combines one period of classroom instruction with 396 supervised hours of employment for 2 credits or with 720 supervised hours of employment for 3 credits during the school year in occupations related to careers in early childhood care and education. Or, students may enroll in a double-period course with classroom instruction and child development/preschool laboratory experience. Class instruction expands on the skills of Early Childhood Careers 1 and includes development of employment strategies. Individual projects and training plans are required for both cooperative education and school laboratory work experiences. These skills will enable the student to develop a fashion portfolio and to execute a fashion line from conception to completion. Students prepare for employment in residential and commercial design and decoration. They acquire skills in the design and decoration of interior spaces, including selection and purchase of furnishings, fixtures, equipment, textiles, and accessories. Critical thinking, practical problem solving, and entrepreneurship opportunities within the field of interior design are emphasized. Students also prepare for continuing education leading to a career in the interior and commercial design field.
