Potato Wedges
  • 2 large baking potatoes
  • 4 Tablespoons butter or margarine
  • 3 Tablespoons Parmesan Cheese
  • 4 Teaspoons Taco Seasoning mix.
  1. Scrub potatoes.  Cut each potato in half lengthwise.  Then cut each in half into 4 lengthwise wedges.  You will get 8 wedges from each potato. 
  2. Microwave the butter on HIGH in a small glass mixing bowl, uncovered, for 45 to 60 seconds or until butter is melted
  3.  Mix cheese and seasoning into the butter. Coat the potato wedges by pouring the butter mixture over the potatoes in the glass baking dish.   Use a rubber spatula and a spoon to toss the potatoes and butter until evenly coated.
  4. Cover the potatoes and casserole with plastic wrap.  Make certain that the plastic wrap sticks to the sides of the baking dish.  VENT ONE CORNER.
  5. Microwave on HIGH for 12 to 14 minuets or until the potatoes are tender, rotating the dish once.
  6. Allow on minute standing time, IT IS VERRRY HOT then carefully remove the wrap to avoid getting burned by the steam. Enjoy
