Macaroni and Cheese

Serves 4

  • 1 Cup elbow Macaroni
  • 2 Tablespoons Butter
  • 2 Tablespoons Flour
  • 11/4 Cups milk
  • Dash of Pepper
  • 11/4 Cups Velveeta Cheese - diced

  • Brink 2 quarts of water to a rapid boil in a large kettle.
  • Add the macaroni after the water boils. Stir occasionally.
  • Cook about 9-10 minutes.
  • Drain the macaroni in the colander in the sink.
  • Cheese sauce
    a.    In medium saucepan, melt b utter, and flour and stir until smooth, remove from heat.
    b.   Gradually add milk, stirring constantly until mixture is  smooth.  Add pepper,
    c.    Return to medium heat.  Cook, stirring constantly until mixture is think and smooth.
    d.    Add cheese and stir until melted. Cover pan and remove from heat. Don't allow cheese sauce to burn on the bottom of the pan
